Lucy-8 celebrated her First Holy Communion yesterday in fine form. I've been dying to have an excuse to make this rainbow cake and yesterday was the perfect opportunity. Firstly, because it TOTALLY embraces Lucy's personality and secondly because rainbows are a reminder that God always keeps his promises. I love that! (recipe is in the sidebar "eating the rainbow").
Despite the enormous help I received (thanks JD for the music accompaniment on the recorder - cruelest musical instrument ever inflicted upon parents) this was heaps of fun to make. Just enough batter made it into the baking tins to make a decent sized cake.
I did that Martha Stewart obsessive compulsive thing where you do a thin covering of icing, then put it in the fridge to set, then ice it again. It actually worked, so instead of the Leaning Tower of Pisa that I usually get, it actually looked presentable. Who knew?The beautiful Miss Lucy Loo in her special dress.
And with one of her besties, Miss G - they so get each other, like two peas in a pod. We worry about their teenage years....if only we can manage to harness their power for good, not evil daring-do.

This spinach dip is A-W-E-S-O-M-E. The hands in this photo belong to my stepmum-in-law who is normally the model of restraint. She said she couldn't stop herself from eating it. I have known squabbles to break out at family gatherings and playgroups over this dip. It is that good.
You probably already know this recipe, but in case you don't:1 pkt frozen spinach
1 pkt Continental Spring Vegetable Soup
1 carton full fat sour cream
1 cup mayonnaise
4 shallots/spring onions
Combine and serve in a bread cob. You can also add a cup of grated cheese and whack the whole lot in the oven for a hot dip.
